  6. Pour in 2 cups of hot water and bring it to a boil.
  7. Add the noodles and mix well.
  8. Cover and cook on medium-low until the noodles are done.
  9. Turn off the flame, garnish with coriander if you're using it, and serve hot.

A few ways to change it up

Add shredded chicken, a boiled egg, or paneer cubes after step 6 if you want something heartier. A slit green chilli or a pinch of crushed pepper along with the onions works if you like it spicier. For kids, skip the coriander and use shorter, softer noodles. The soup base itself (steps 1-6) keeps well in the fridge, so you can make it ahead and just add noodles when you're hungry.
